GemPro® Prime-E is a clean label wheat protein isolate prepared by a unique and proprietary process. GemPro® Prime-E provides extensibility to dough systems, improving sheeting and pan flow. The protein can be used to improve rollability and flexibilty in flat breads or to improve overall rheology.
GemPro® Plus is a clean label wheat protein isolate prepared by a unique and proprietary process. GemPro® Plus imparts moderate elasticity and extensibility to dough systems. It improves the machinability of dough and imparts firmness to pasta products.
