    Gem of the West® vital wheat gluten is ideal for a variety of baking and food applications requiring unique visco-elastic properties. Produced by low temperature drying of gluten extracted from high quality wheat flour, Manildra’s Gem of the West vital wheat gluten contains a minimum of 75% protein and is a mainstay in bread and roll production.

This specialized process ensures the product retains the same vitality of wet gluten. Gem of the West® Vital Wheat Gluten provides strength and elasticity, increases volume, and improves the texture of breads, buns, dinner rolls and other yeast-leavened products. It also imparts firmness to pasta and noodles and is used to enhance the protein content of breakfast cereals and snacks.     GemStar® wheat starches include both unmodified and modified starches made from native wheat starch. Wheat starches are ideal in bakery applications because the unique properties of wheat starch are more compatible with the flour already in bakery formulations, creating a balanced texture and mouthfeel.
