High Protein White Sandwich Bread featuring GemPro® 5100 and GemPro® Shine


Isolated from hard wheat flour, the special treatment process of GemPro 5100 creates a product with neutral flavor profile and low water holding capacity. GemPro 5100 can add non-strucutral body to a variety of food applications like bread, tortillas, and sweet goods. 


Coming in at 75% protein, GemPro 5100 undergoes a special process that denatures the viscoelastic properties of gluten resulting in a protein enhancer suitable for a variety of food applications. 


GemPro Shine was created enhance shine, color and appeal of baked goods on store shelves. It is easily dispersible in water, and when applied before baking, will create a brilliant shine without off flavors.
