GemPro® Nova Wheat Protein is a replacement for whole eggs in all-purpose bakery applications such as cookies, muffins, and pastries. The protein is designed to provide structure, resilience, and emulsification, making it an excellent option for replacing eggs.  Eggs can be replaced up to 100% based on solids with GemPro® Nova Wheat Protein in these applications.
